I’ve been hesitant to post about my Chicago training because my last two marathons fell short of my goals 😅. Throughout this training cycle I have grown to love the sport again and I have taken the pressure off of myself to finish at a certain time. I’ve now realized that all of my marathon finishes are something to be extremely proud of and that life is so precious.

If you would like to follow my journey on Sunday you can download the Chicago Marathon app and search for my bib number, 14328. I start with Wave 1 at 7:30! Any thoughts, prayers, and cheers would be greatly appreciated!!
It’s been a while since we’ve posted on here b It’s been a while since we’ve posted on here but I wanted to make a return with a delicious recipe!! I had some ripe bananas so I decided to throw together a recipe! Give it a try - trust me you won’t regret it! 🍌🍫 - Sue

Mini Banana Chocolate Chip Oat Flour Muffins

Ingredients: 
- 1 1/2 cup of oat flour (I put rolled oats into a blender and made the flour) 
- 1/4 cup of cane sugar 
- 1 tsp of baking soda 
- 1/2 tsp of sea salt
- 3 medium ripe bananas
- 2 eggs
- 1/4 cup of olive oil 
- 1 tsp of vanilla extract 
- 1/2 cup of mini chocolate chip plus more for topping 

Instructions: 
- Preheat oven to 375 degrees
- Line muffin tin with liners or spray with avocado oil (I sprayed with avocado oil and it was great!)
-Mix together dry ingredients in a bowl 
- Mash bananas in another bowl
- Add wet ingredients to the bananas and then mix
- Add wet ingredients to the dry ingredients and mix util combined
- Fold in chocolate chips 
- Fill muffin tins 3/4 of the way full 
- Bake for 15-17 minutes, until the muffins are golden brown
- Use a toothpick to test if done, the toothpick should come out clean 
- Let the muffins rest for 10 minutes and store in an air tight container
We have been gate keeping this recipe for a while We have been gate keeping this recipe for a while now! Maple mustard chicken is a go to recipe for us. We pair it with brown rice and a roasted veggie like green beans or broccoli. We hope you enjoy!

Matt and I went on the trip of a lifetime a couple Matt and I went on the trip of a lifetime a couple weeks ago! We made our way through Montana and down to Vegas, making stops at several National Parks in between!

Not only was this trip filled with hiking adventures, but Matt also proposed! 💍🎉 He proposed in Paradise Valley, Montana and it was absolutely perfect. Still over the moon!!!

 To make the trip even better, @mbpazdan and @mtbernst flew out to celebrate with us in Vegas! It was truly the best surprise ever! 🍾🥳
Boston Marathon recap Part 2 🌟 Race day start Boston Marathon recap Part 2 🌟 

Race day started with Sue putting some #fastbraids in my hair, which has become a tradition for every race morning! Then instead of taking a bus to the start line, my aunt @judithl8753 was kind enough to drive me to the start. 

Since my start time wasn’t until 11:00, we got to watch all the professionals start! About half and hour before my start, Dad and Sue had to leave to get back to mile 20 where they would be waiting for me. Might have shed a tear when they left but I started to feel ready. 

At the start, I looked to my right and a man wearing a @charlotterunningcompany visor was standing next to me! This made me feel so at home and then the gun went off!

Miles 1-10 felt phenomenal. My goal race pace (7:50) felt smooth and the spectators were awesome, but I did notice the hills. Constant texts from @jessiee_119 at each 5k mark helped keep my spirits high!!

I was still floating around the same pace through the half way mark, but was anxiously awaiting Mile 16 when the Newton Hills start. Boy did I underestimate those hills. I was able to hang on until Mile 20, mainly because I knew I would see my family, @mtbernst, and his parents, but it was HARD. 

Hardcore teared up seeing Sue and luckily she ran a few steps with me to help get me pumped up to conquer Heartbreak Hill. Y’all Heartbreak Hill is no joke. This was my slowest mile of the whole race, BUT I didn’t walk! 

Miles 22-26 were kinda a blur. The crowds were awesome, but I was so ready to be done. Just when I was feeling the worst, I saw and heard @_mkfrey_ which boosted my spirits!The turn on the Bolyston Street was one I will never forget. Seeing the crowds and the finish line was surreal and impossible to describe. When I crossed the finish line, I was an instant ball of tears and so glad to be done. 

Part of me couldn’t believe that I just accomplished this life long dream but I would be lying if I didn’t say I wanted to do a bit better. I feel so grateful to have had the experience but now I am focused on coming back even stronger!

Boston, you were humbling and everything I could have ever dreamed of 🥹
Boston Marathon weekend recap Part 1🤩 Mom, Dad Boston Marathon weekend recap Part 1🤩

Mom, Dad, Sue and I flew up to Boston on Friday and enjoyed lots of time with family! Huge shoutout to our awesome tour guide @judithl8753! The rest of the weekend was spent shopping at the expo, walking around the finish line, eating brunch at @tattebakery, and enjoying some down time. It was so fun seeing so many marathoners out and about!

We enjoying Easter Mass and brunch on Sunday followed by a pre race shakeout along the hills in Newton. Dad gave me lots of great advice as we jogged up the infamous Heartbreak Hill and I thought the hills were pretty doable! Didn’t think about how differently they would feel the next day at mile 20 of a marathon 🤪

Later on that evening, Sue surprised me with a video of many friends and family wishing me good luck and of course I was an emotional mess. To say I felt special would be an understatement. From the bottom of my heart, thank you Sue for putting it together and to everyone who participated, thank you for your kind words! They truly meant the world and I will never forget them 😭
